The kitchen at Maze has masterfully broken the mould with an innovative French cuisine where flavour combinations are both exciting and original in dishes such as Jerusalem artichoke velouté, duck ragout, Lincolnshire field mushrooms on olive toast; roasted monkfish bourguignon, swede, carrots and marrowbone and braised octopus, oxtail vinaigrette, dehydrated black olive, fine herbs and confit lemon.
