Indulge in dishes such as roasted rack of sea bass in a crust of chives with white coco beans from Pigna, grenobloise condiment and capers from Panterella or pink roasted breast of pigeon from racan flambéed “au capuchin”, grilled duck foie gras, Brussel sprouts with bacon and an intense sauce with Mexican molle and for desserts a pear jelly with crystallised ginger panna cotta, a clafoutis biscuit and pear granite.
