Heading up the Chiswell Street Dining Room kitchen is Head Chef Richard O’Connell, formerly of One Aldwych and The Groucho Club, who has created a champion British menu featuring both traditional and contemporary dishes such as Herefordshire snail and smoked bacon pie with a Guinness and mushroom sauce; grilled whole Cornish lemon sole with dill butter and tenderstem broccoli and roast rump of West Devon lamb with lemon courgettes, potato gratin and rosemary jus.
