Dishes include Shetland Islands mussels with garlic, parsley, white wine sauce and a grilled baguette; Aged Aberdeenshire steak served with French fries and a sauce of choice and duck breast with parsnip puree, toasted almonds and pomegranate jus. The signature dish has to be the lline caught Cornish Sea Bass served with crushed potatoes, baby leeks and lemongrass sauce, which really does symbolise the innovative character of the kitchen.
