Molecular gastronomy has landed in Shoreditch courtesy of Portuguese chef Nuno Mendes, whose CV includes time at the legendary El Bulli near Barcelona. Bacchus restaurant in Shoreditch, London's grooviest quarter, is at the front of the cutting edge. The atmosphere at Bacchus is relaxed and the food is good. Their cuisine is created using a Sous-vide method where the food is cooked at extremely low temperatures resulting in unparalleled tenderness and taste. Bacchus is the first restaurant in the UK to own an Anti-Griddle. Instead of cooking things, this griddle, freezes them, allowing you to freeze sauces and purees solid or make semi-frozen dishes with crunchy surfaces and creamy centres. The minus 30°F 'griddle' temperature ensures almost instantaneous results. A recent favourite with customers is Frozen English pea 'lollipops' served as canapés. Bacchus utilises the best seasonal ingredients to create dishes with styles taken from a variety of cooking techniques, traditions and cuisines. Great attention is paid to the five senses of sight, touch, taste, hearing and smell. Bacchus couples this with the use of the latest technological advances in cooking to produce new and innovative ways of preparing and presenting dishes. As a result, the menu at Bacchus can often surprise with its sometimes unusual combinations of ingredients and avant-garde approach to mixing flavours, textures and concepts of traditional and modern cooking. The ethos behind Bacchus is that it is possible to enjoy top-quality food mainly associated with fine-dining restaurants without the formality of best dress and best behaviour. Customers can also select their soundtrack to the evening by choosing their favourite tracks on a giant ‘iPod'. Highly recommended.

I dined at Bacchus with a couple of girlfriends and we had an amazing time. My foodie friend loved the menu and said she couldn't fault one dish (she actually said that the food was better and much better value than some 3 Michelin places she eats at because of the nature of her job) For me, some combinations of ingredients were a little bit out there but I loved trying something completely new! I have to say a big massive thanks to the fantastic, friendly staff that were helpful enough but didn't come over to the point of being annoying. What I really liked about this place is that they've made fine dining accessible. The music in the background made the feel nice and relaxed. I'll definitely be going back soon!
