Aberdeen born Brian Spark heads up the project as Executive Chef, and signature dishes include potted shrimps, deep fried white bait and brown toast or assiette of suckling pig: loin, rillette, belly bacon, crackling celeriac, apple and grain mustard to start, followed by roast halibut on the bone, smoked aubergine, chanterelle & red pepper or stuffed loin of Elwy valley hogget braised savoy cabbage, turnip purée and glazed petit onions.
